How one ingredient changes my favorite potato salad recipe…

Everyone has their favorite potato salad recipe and even in houses where cooking isn’t a major pastime somehow a standard for making it is set and followed through the generations.

I’ve found over the years of making potato salad (and watching food tv) that there are two major headings for potato salad. Vinegar-based is a popular type and then there is what I refer to as creamy which base is mayonnaise.

Within each group there are surprisingly few variations. Usually a recipe changes only by one or two ingredients making a wildly simple recipe that can be personalized to your own taste.

Most creamy potato salads include the following:

  • Potatoes
  • Hard boiled egg
  • Onion (I prefer red.)
  • Mayo
  • Mustard
  • Salt
  • Pepper

One ingredient that changes my favorite potato salad recipe is whether I put in dill or sweet pickle relish!

Maybe it’s my sugar addiction doing the choosing, but sweet pickle relish in my potato salad makes it a recipe I could eat four times a day:

  • Breakfast
  • Lunch
  • Dinner
  • Dessert

Here is how you prepare my version of potato salad:

  1. Cook 6-8 potatoes until soft but not mashed potato soft. Peel them or don’t, but cut them into inch thick cubes. Cool in the fridge while you prepare the rest.
  2. Prepare 8 hard boiled eggs. Cool in the fridge. Peel and cut up into large chunks. If you need tips on hard boiled eggs check out my tips from Easter 2016: How to boil the perfect hardboiled egg
  3. Chop up a red onion into preferred size pieces. I normally do them dime-sized.
  4. Get a big bowl and add the potatoes, eggs and onion.
  5. Add a large spoonful of mayo and stir.  If it doesn’t look wet enough add another scoop.  I tend to use about 3 scoops.
  6. Squirt mustard into the bowl.  I can’t really tell you how much to put in.  I know I know, but everyone is different when it comes to mustard.  My general rule is to put enough in to make the mix look yellow.
  7. Add salt & pepper to taste.
  8. Finally add that relish.  Whether it’s dill or sweet, add a big spoonful and mix it around.  If you don’t see pickles all over the mix, then add more.  Again, this is to taste!  Remember, if you add dill pickle relish you’ll get a more sour taste and sweet pickle will give you a sweet taste.
  9. Put in the fridge to keep cold.
  10. Eat & Enjoy!

  3. I agree that a good potato salad has a ton of pickles- doesn’t matter which type! Pickles totally make potato salad- and so many other dishes too! I prefer to use Bubbies- awesome pickles if you’ve never tried them.
